Ziti
Baked pastas may seem a bit time-consuming, but not if you already have the
pasta cooked and waiting in your refrigerator! Cooking in the oven also requires so much
less attention than on a stovetop. Use your kitchen resources; cook the sausage, onion,
and garlic in the microwave, if you like.
8 oz. ziti (3 cups cooked)
3/4 lb. ground Italian sausage
1 medium onion, chopped
2 tbsp. chopped garlic
1/2 tsp. red pepper flakes
1-1/2 tsp. dried oregano
1 red bell pepper, cored, seeded and chopped
1 can (15 oz.) tomato sauce
1 can (16 oz.) pasta-style cut tomatoes
Salt and pepper to taste
1 cup grated mozzarella cheese
Preheat the oven to 375 degrees. Lightly coat an ovenproof 2 quart casserole with
non-stick spray. Cook the pasta according to package instructions. Drain well and set
aside in the casserole. Meanwhile, heat a large deep skillet over medium heat. Add the
sausage and cook 5 to 8 minutes, until no longer pink. Set aside with the pasta. Add the
onion, garlic, red pepper flakes, oregano and red pepper to the skillet and cook 3 to 5
minutes, until the vegetables are soft, then add to the casserole. Add the tomato sauce
and cut tomatoes. Season with salt and pepper and stir well. Sprinkle the cheese on top
and bake for 20 to 25 minutes, until it is heated through and the cheese is brown and
bubbly. Makes 4 to 6 servings.
