Baked Apples
This is a simple ending for any meal. Prepare this easy dessert before your
meal, and let it bake as you are eating. It may be served hot or at room temperature, with
or without vanilla ice cream.
1 cup white wine
1/4 cup golden raisins
1 cinnamon stick
Finely chopped zest of 1 lemon
1/4 cup sugar
6 Granny Smith apples, cored
6 tbsp. butter
Preheat the oven to 400 degrees. Heat the wine in the microwave or in a saucepan until
hot. Add the raisins, cinnamon stick, lemon zest and sugar and let steep and plump 8 to 10
minutes. Remove the cinnamon stick. Drain the raisins and reserve the wine mixture. Stuff
the cored apples with the raisins. Place the apples in a small roasting pan. Pour the
reserved wine over and around the apples. Place 1 tablespoon of butter over the hole on
each apple. Bake for 30 to 35 minutes, until the apples are tender. Makes 4 to 6 servings.
