It can be enjoyed as a fresh salad starter or as a side dish for Asian noodles. 1 small red cabbage, very thinly sliced 2 tbsp. chopped peanuts 3 carrots, peeled and grated 2 tbsp. sesame seeds, toasted 1 tbsp. soy sauce 1 tbsp. rice wine vinegar 1/2 tsp. Asian sesame oil 1/3 cup vegetable or peanut oil Place the cabbage, peanuts and carrots in a large mixing bowl. In a medium bowl, whisk together the sesame seeds, soy sauce, vinegar, sesame oil and vegetable or peanut oil. Pour over the cabbage. Toss well to coat. Makes 4 to 6 servings.
